The bakery and pastry sector includes everything relating to bread, pastries, cakes and cookies. The pastry sector includes industrial pastries as well as handmade pastries.
In the 1990's, the appearance of semi-prepared products (frozen dough and precooked bread) caused major changes and restructuring in the subsector. These changes are ongoing.
